Since the UK census was done in June 1841, that means that Edwin was likely born Jan 1841 or Dec 1840. Also - Sarah was born outside somerset as was the oldest son. That leads me to believe that her husband was likely from outside the county and that they were likely married outside the county.

The name is messed up but this is Pharoah Hercules - and younger brother Herbert who also becomes Lucas. Note that Herbert is only 6 months old - meaning that the father has died very recently since Sarah says she is a widow here.

And Sarah says that she is a widow in 1841 at Edwin's birth!! She did not state that on the census!! So - John has died before or close to the time Edwin is born? Which calls into question - who is the father for Hercules and Edmond?
At this point, I begin to wonder if Sarah Lear and John Rose split up and Sarah has children by more than one partner? Is Edwin's middle name - Winter - an indication of the father? I don't know and the father is not named on the abbreviated record noted above.

Sarah also says that she was born in Gillingham - this leads me to believe that her son John was and possibly her husband as well.

In the 1841 census (which gives place of birth) there were lots of Roses. I narrowed the choices down to those with names of Sarah's sons (John, James, George, Charles, Edwin, Hercules). I indicated that they had to be born outside the census area and this is the result:
Possibilities for Edwin's father based on 1841 census Somerset where the family is all together exceot Dad who must have been at work and counted there. Based on Sarah is 35 then Dad should be 35-45 and therefore born 1795 - 1806
I have deleted all the women except Sarah.

The first 3 sons of the couple are John Charles and James. The next are George and Herbert and our Edwin. I imagine the father is one of these names (possibly!) He should also be about the same age as Sarah - 35. I have highlighted these.

Since in 1851, Sarah says that she was born in Gillingham and since she was only about 21 when the first child - John - was born, I thought I would look at Gillingham for our John. With that, I found the following on family search:

I am almost certain that this will turn out to be him. He is the only John Rose in the 1841 census in Gillingham.

Of course the puzzle is - why is Sarah not there? I don't know.

To confirm the relationship between John Rose and Sarah Lear, I went looking for a marriage record in Gillingham and found this on familysearch.org:

Given the location - Gillingham - and the names and ages, I believe that John Rose married Sarah Lear in 1825 in Gillingham, Dorset. Sarah would have been about 20. By 1851, John has died very young leaving Sarah with 6 sons still at home. Only the oldest - John - has left by the 1851 census.
